For example, acid breakdown is required for protein breakdown, and alkaline for carbohydrates. Therefore, the main goal of separate nutrition is to help the body tune in to each element. If products of different nature are simultaneously in the stomach, then their digestion is difficult, and when consuming incompatible products, the body malfunctions. Poorly digested foods are deposited in the form of fat and slag, and this can lead to weight gain and the development of diseases.

Characteristics of fruits and vegetables

Basic Product Combination Rules

1) Proteins + carbohydratesincompatible combination. They are assimilated in different ways and, when mixed, they interfere with each other: to digest proteins, the stomach enhances the acidity of the juice, which quickly stops the absorption of carbohydrates, which occurs only in an alkaline environment. Therefore, after the simultaneous intake of such products, fermentation begins.

2) Proteins + proteins. Also not a desirable combination. For the digestion of proteins of different types, gastric juice of different acidity is secreted. Therefore, one of the components will not be digested well or longer than usual. Do not combine meat with eggs, milk with nuts, cheese and meat.

3) Proteins + fats. Any fats inhibit the production of gastric juice. The presence of fat may delay protein digestion by more than two hours. Therefore, do not combine proteins with fats. The situation can be saved only by the abundance of greens on the table, which reduces the ability of fats to inhibit secretion.

4) Proteins + starches. Digestion of proteins requires a very acidic environment, and digestion of starches requires a little acid. If you mix these types of products, then the breakdown of starches will suffer, since a lot of hydrochloric acid intended for proteins is immediately released in the stomach.

5) Proteins + acids. Hydrochloric acid and pepsin are released to digest protein. But if you eat acidic food along with protein, the body will produce less pepsin than necessary. That is, the process of protein digestion will be delayed. This combination causes the process of fermentation and rotting of protein foods.

6) Protein + sugar. Sugars of any kind interfere with the production of gastric juice. Thus, the absorption of protein foods is inhibited. Do not combine proteins with sugars. Protein, without being digested, is in the stomach for too long, provoking the processes of decay.

NoteThe following vegetables are combined with proteins: cabbage, root vegetables, onions, zucchini, spinach, celery and other vegetables that do not include starch. When eating protein foods or starchy foods, the best supplement is green leafy vegetables that are not seasoned with anything. You can add tomatoes, bell peppers, cabbage, radishes to such a salad.

7) Carbohydrates + acids   - a bad combination. The acid of the products destroys the enzyme ptyalin (saliva alpha amylase), which is necessary for the breakdown of carbohydrates.

8) Carbohydrates + carbohydrates (or starches):   you can eat one type of starch or carbohydrate at a time (for example, you should not eat bread, potatoes with pea puree and a sweet cake together), since only one type of starch / carbohydrate will be taken by the stomach for digestion, and the rest will remain intact, delaying the passage of food, which ultimately leads to fermentation.

9) Carbohydrates + sugar   do not combine. Traditional jam pies, sweet cereal and pasta casseroles, cereals, jam and honey on bread or in one meal with cereals and potatoes cause fermentation in the stomach.

10) Starches + acids. This is not a desirable combination, since acids destroy substances that digest starches.

11) Starches + sugars. Digestion of starches begins in the oral cavity under the influence of saliva enzymes, and ends in the stomach. And sugars are digested only in the small intestine. Thus, once in the body together, sugars are retained in the stomach, which causes the fermentation process. Conclusion: porridge can not be sugar or put honey, bread with raisins, prunes or dried apricots in them.

NoteStarch does not mix well with other products. Starchy foods cannot be combined with each other. For example, potatoes and bread are digested in different ways. Therefore, they will interfere with each other. Starchy food needs to be chewed very well, since processing of it with saliva is important for its assimilation. When cooking cereals, do not “smear”, let the porridge be a little dry - this is more useful. Light vegetables and root vegetables combine well with starches. Features

Melons   digested in the intestines. If melons enter the body with other foods, then digestion of melons and other foods is inhibited. Therefore, melons are used as an independent dish. Due to the fact that melon (and sometimes watermelon), when eaten with other products, is poorly digested in the stomach and causes an upset, it was felt that melon "weakens". Meanwhile, it cleanses the gastrointestinal tract well if eaten separately.

Milk   taken as a separate food. Milk is hard to digest along with any food other than sour fruits.

Dessert   for the most part, they are not healthy food. They are hard to digest, inhibit the assimilation of other products. Therefore, it is better to avoid the use of desserts. Cold desserts are very harmful. Since the cold interferes with the digestive enzymes.

Fruitvery useful to combine with nuts. In addition, fruits are well digested with root crops and starch-free vegetables.

  • Do not mix fruits with other products.

1st group   - protein products. Digested in an acidic environment: meat, fish, eggs, legumes, nuts, seeds, eggplant;

2nd group   - live foods. As a rule, they are used without heat treatment. They contain enzymes for the breakdown of nutrients: greens, fruits, vegetables (except potatoes), berries, dry wine;

3rd group   - carbohydrates. Digested in an alkaline environment: sugar, honey, jam, potatoes, bread.

Conditionally compatible groups: 1 + 2, 2 + 3.

So much has been said, and what cannot be combined, that a completely fair question arises - and what can you eat with?

Meat, fish, poultry.

The best side dish for meat dishes - salad, spinach, leaf beets, cabbage, asparagus, zucchini, pumpkin, onions, radishes, cucumbers. By the way, a salad of tomatoes and cucumbers (a classic of the genre!) Is not recommended: ascorbate oxidase, which destroys vitamin C, which is rich in tomatoes, is released from chopped cucumbers.

Potatoes.

Zucchini and white cabbage are perfectly combined with boiled and baked potatoes. Seasoning potatoes with herbs or fried onions is also a healthy option. By the way, it’s better not to sprinkle potatoes with butter. Because potatoes are a source of carbohydrates, it has a high glycemic index (which means that it raises blood sugar). To lower glucose, the pancreas produces large amounts of insulin, which stimulates the formation of fat cells. And we do not need extra folds on the body.

Cereals.Eat any cereals on the water (buckwheat, millet, rice, oatmeal, barley, etc.) with vegetable salads seasoned with olive oil.

Fruitit is better to eat separately, two hours after a meal, or 40-60 minutes before a meal. However, in the modern rhythm of life, it is better to eat fruit for dessert than a confectionery product. Therefore, the combination of fruits with other products is still acceptable.
