This recipe is my favorite and my family loves pizza with just such a dough. It turns out to be thin, but soft and with crispy sides. It compares favorably with other yeast-free recipes. Try it yourself!

  • flour - 1-2 glasses (it all depends on the consistency of sour cream);

A large, wide container is filled with warm water, in which the yeast is mixed until it is completely dissolved. Then add half a teaspoon of salt and sugar, as well as 20 grams of olive oil. All this should be mixed until the sugar dissolves.

Sifting flour through a sieve will not only remove excess flour, but will enrich it with oxygen.

If, while kneading the dough, it doesn't want to become perfect in any way, you can add a little more flour. But in the case of too steep dough, a small amount of water and further kneading will save the situation. For dough (preparation), yeast, warm water are mixed in the form of two tablespoons and the same amount of flour. Having mixed well, this "creation" is covered with a towel and left warm for half an hour. Sometimes, the dough is ready after ten minutes, so it is worth monitoring its condition.

A blank is poured into a groove made in flour in a separate bowl, salted to taste and about 125 ml of water is added. It is necessary to knead according to the same principles: the dough should not stick and break when stretched. Leaving in a properly warm place for about an hour, it is worth remembering that it should increase by two.

The most basic goal is crispy yummy as a result. To do this, the oven is preheated to about 200 degrees, and the mold is greased with olive or sunflower oil. Next, the laid out and rolled dough is smeared with tomato sauce and put in the oven for five minutes. After that, you can already lay out the filling, with which the pizza is in the oven for another twenty minutes. Due to the fact that the dough without the filling has already baked a little, it will undoubtedly crunch pleasantly in the mouth.

It so happens that there are not so many crunchy lovers in the immediate environment. Or another situation: the classic dough is already a little fed up and you want something a little different. A huge number of recipes come in handy as never before, because the same favorite pizza is quite possible to make with soft dough.

Cooking process. In a deep bowl, combine salt with sifted flour, make a depression. Whisk the water, egg and vegetable oil well in a separate container. Pour the resulting mixture into flour in portions, stir to get a homogeneous mass. Add more flour, if necessary, until you get an elastic ball. Leave it for half an hour, covered with a linen napkin. After dusting the table with flour, roll it out as thin as possible.
3. On water with olive oil
Required Ingredients: 2 cups already sifted flour, 4 tbsp. extra virgin olive oil, half a glass of boiled, slightly lukewarm water. 1 tea. l. sea ​​salt, 1 tablespoon baking powder (baking powder).
Cooking process. Add salt and baking powder to the sifted flour, mix. Pour in water first, then olive oil. Stir with your hands until elastic for at least 10 minutes. Roll into a ball, use a knife to mark how many cakes will turn out. Cut and stretch each piece directly on the table with your hands to the desired size and transfer to a baking sheet.
4. On serum
Required Ingredients: 1 glass of whey, 4 tbsp. flour, 3 tbsp. l of vegetable oil, preferably odorless, 1 tea. l. table salt, half tea. l. baking soda.
Cooking process... Pour the whey into a deep bowl. First, stir only 1 cup flour, salt and baking soda into the whey until smooth. Then add oil and stir again. Now add the rest of the flour in small portions, carefully stirring in a new portion each time. Gradually, a well-stretching dough is obtained. Divide it into parts. Lubricate your hands with butter and stretch each piece into a circle directly on a broiler or baking sheet.
5. On milk
Required Ingredients: 3 cups wheat (pre-sifted) flour, 1 cup slightly warmed milk, 1 egg, 3 tbsp. l. sunflower oil, 1 tsp. salt.
Cooking process. First pour 2 cups of flour. Stir milk, egg, butter, salt in a bowl with a fork. Pour the resulting mixture a little into the flour, stirring with each portion. The flour swells gradually. Knead further, now adding the rest of the flour, until you get a smooth dough. Make a ball, cover soaked cold water with a kitchen towel, leaving at room temperature for 20 minutes. Roll out on a table sprinkled with flour literally until translucent, transfer on a rolling pin to a slightly oiled baking sheet.
6. On homemade sour cream
Required Ingredients: 3 glasses of flour, 200 gr of fresh sour cream, 3 eggs, 1 tbsp. butter ghee, 1 tea. l. salt, a little (pinch) of baking soda.
Cooking process. Beat eggs, salt, butter and soda with a whisk or in a mixer, add sour cream, stir quickly. Pour in the whole amount of flour at once and knead the dough. Roll out immediately after kneading, dusting with flour if it sticks.
7.With low calorie mayonnaise
Required Ingredients: 1 cup flour, 5 tbsp. l. mayonnaise, 3 eggs, half tea. l. salt.
Cooking process. Beat eggs with a mixer with mayonnaise and salt. Sift the flour in a bowl with a slide, then make a hole on the top and pour in all the egg mixture in one go. Knead the dough, add flour if necessary to form an elastic ball. Roll out immediately, as thin as possible. Without removing from the rolling pin, transfer to a baking sheet greased with vegetable oil.
8. On kefir with an egg m
Required Ingredients: 3 thin-walled glasses of wheat flour, 1 glass of kefir, 1 egg, 1 tea. l. salt, 1/3 tsp. soda,
Cooking process. Mix salt and soda with flour. Shake the egg with kefir and add flour in small portions, kneading an elastic dough. Roll out immediately, adding flour evenly.
Kefir can be replaced with fermented baked milk, yogurt or sour milk.
9. On kefir and margarine
Required Ingredients: 6 cups of wheat flour, 2 cups of kefir, a pack of margarine, 1 tea. l salt, 1/2 tea. l. baking powder (can be replaced with slaked soda).
Cooking process. Place the margarine in the freezer for 2 hours. Stir salt and baking powder in kefir. Rub the margarine through the large holes of the grater into a large container. Pour in the kefir mixture and stir everything together. Sprinkle flour in portions, stir regularly until a soft dough is formed, which then refrigerate for 2 hours. Then separate the required amount from the dough and smooth with your hands into a thin layer directly on a greased baking sheet (baking sheet).
10. With sour cream and mayonnaise
Required Ingredients: 2 cups of flour, 5 tbsp each l. sour cream 15% fat and any low-fat mayonnaise (you can use soy), 1 egg.
Cooking process. Combine egg, sour cream and mayonnaise in a mixer. Add flour gradually and do not stop kneading. The dough, in the end, resembles thick sour cream. Pour it gently and evenly into an oiled deep dish, a saucepan. After distributing the filling, in this case, you can cook pizza in a pan.
11. On sour cream and butter
Required Ingredients: 3 cups of standard flour, 300 g of non-acidic and low-fat sour cream, 3 tbsp. l. very soft butter, 1 egg, 1 tea. l. salt, baking soda on the tip of a knife (pinch).
Cooking process... Beat the egg with a whisk or in a mixer with sour cream and salt, then add butter. Mix flour with soda. Pour into the egg-sour cream mixture, stir. The dough outwardly resembles very thick sour cream (the spoon stands and does not fall immediately). If it is too liquid, then add flour to the required consistency.
12. On ghee
Required Ingredients: 2 cups of flour, half a glass of ghee, 1 egg, 1 tea each. l. salt, granulated sugar and baking powder.
Cooking process. Heat ghee just a little, stir salt and sugar in it. Add baking powder and separately beaten egg. Mix well. Pour in the sifted flour in parts, knead until a fairly soft dough is obtained. Cover with a linen napkin moistened with water for 10 minutes, leaving it on the kitchen table to swell the flour proteins. Then roll it out, sprinkle with flour.
13.With milk, butter and sour cream
Required Ingredients: 3 cups of flour, 1 glass of milk, 3 tbsp. l. sour cream, 100 grams of butter, half a tea. l. salt and soda.
Cooking process. Stir the flour with salt and baking soda, then chop with a knife with hard butter (from the freezer). Pour milk into sour cream, stir and pour into an oil-flour mixture. Knead the dough and distribute then, by stretching with your hands, over the baking sheet.
